This is why they produce them with the care and knowledge that passes down from generation to generation.

Even if in Crete, even mainland Greeks might need a dictionary in order to eat, one does not need to be a taster in order to appreciate the high quality of the ingredients and the imaginative recipes that often significantly differ from place to place.


Dishes such as hochlii (snails), xinochondros (dried wheat with goat milk), kreatotourta (lamb and cheese pie), stamnaghathi (wild herbs), staka (cooked sheep milk cream), sfakianes pites (fried cheese pie from Sfakia) or tsigariasto (lamb stew), are made by experienced cooks using exclusively local ingredients, truthfully following the steps passed down to them by their mothers and grandmothers.
